Time to Catch Up

Now that school has begun, I feel like I can catch up on some things that were pushed aside during summer. Blogging, for one, was not on my priority list (however, reading other blogs did not get booted from said list). I also have a freezer full of peaches from our tree. I did not have time to make jam or bottle them the week they were ready for harvesting. So I threw them in the freezer in hopes that I could juice them a few weeks later. I bought a steam juicer and have promised my family some bottled peach juice. Who knows how quickly we'll ingest it. But at least I can feel good about preserving something. About a month ago I made apricot, strawberry, peach and plum jam (as you can see in the photo above, I let the jam jars sit upside down for too long, thus the air pocket at the bottom of jar--rookie mistake). This is the first year our trees have really produced significant amounts of fruit. Needless to say, I shouldn't have to buy any jam for a while.
